This dish goes together quickly (especially if you pick up a roasted chicken at the grocery store) and is very tasty. From Better Homes and Garden website.

Recipe says this serves 4 (but I served 5 adults and had leftovers, so I’d say 6).

8 oz. dried rigatoni
2 cups fresh broccoli florets
1, 2 – 2  1/4# whole roasted chicken
1 5.2 oz pkg semi-soft cheese w/ garlic and fine herbs
3/4-1 cup milk
1/4 c. oil-packed dried tomatoes, drained and snipped
1/4 t. freshly ground black pepper
fresh Italian (flat leaf) parsley, optional

In large saucepan cook pasta according to pkg. directions, adding broccoli during the last 3 minutes of cooking time. White pasta is cooking remove meat from roasted chicken. Coarsely chop chicken. Drain pasta and broccoli; set aside.

In same saucepan combine cheese, the 3/4 c. milk, tomatoes and 1/4 t. pepper. Cook and stir till cheese is melted. Add pasta mixture and chicken. Heat through. If necessary, thin with additional milk. Sprinkle with parsley.
