Barbecue Pork Sandwiches

Nothing beats pulled pork thats been smoked for hours. However if you don’t have a smoker or need a easy slow cooker recipe, this pulled pork recipe is about as good as it gets.
Adapted from Real Simple magazine

2 pounds boneless pork shoulder or butt, trimmed of excess fat
1/4 cup packed brown sugar
1 teaspoon chili powder
1 garlic clove, chopped
1 teaspoon kosher salt
1/4 teaspoon pepper
1/2 cup cider vinegar
1/2 cup beer (water could also be used)
1/4 teaspoon liquid smoke
1 cup barbecue sauce
6 soft sandwich rolls

Place pork in a 5-6 quart slow cooker. Rub with the brown sugar, chili powder, garlic, salt, and pepper. Add 1/2 cup of cider vinegar and 1/2 cup water.
Cook, covered until the meat is tender and shreds easily, on high for 4-5 hours or on low for 7-8 hours.
Before serving, transfer the pork to a bowl, discarding the liquid. Using 2 forks shred the meat. Mix in the barbecue sauce and serve on soft sandwich rolls.
