A delicious chocolate loaf! Even if you aren’t a fan of zucchini, I think you will enjoy this bread. Makes 2 loaves or 1 large and 3 small loaves of bread. I freeze several batches of this bread when zucchini is abundant in the summer months.

3 large eggs
1 cup vegetable oil
2 tsp. vanilla extract
2 cups sugar
3 cups grated zucchini
2 1/3 cups all-purpose flour
1/2 cup unsweetened cocoa powder
2 tsp. baking soda
1 tsp. ground cinnamon
1 tsp. salt
1/4 tsp. baking powder
1/2 cup chopped nuts (optional)
1 cup chocolate chips

Preheat oven to 350F. Grease and four two 9×5 inch loaf pans. Mix eggs, oil, vanilla, sugar and zucchini in a medium bowl. Whisk together flour, cocoa, soda, cinnamon, salt, and baking powder in large bowl. Stir in nuts and chocolate chips. Add zucchini mixture and stir well. Pour into prepared pans. Bake 45 minutes or until wooden pick inserted near the center comes out clean. Cool in pans for 10 minutes, then turn out and finish cooling on rack.
