Spinach and Watermelon Salad

Servings: 6

1 T. honey
1 T balsamic vinegar
1 T water
1 1/2 tsp. olive oil
1/2 tsp. lemon juice
1/8 tsp. dried tarragon
dash salt
4 C fresh spinach, torn
4 C romaine lettuce, thinly sliced
1 C watermelon balls, 1 inch thick
1 C strawberries, sliced
1/2 C cucumber, sliced
1/4 C red onion,thinly sliced rings

Combine first 7 ingredients in a bowl, stir well with a whisk. Set aside.

Combine spinach and remaining 5 ingredients in a large bowl. Drizzle dressing over salad, and toss gently to coat. Serve immediately.
