Herbed Pork Tenderloin w/ Apricot Glaze

2 (1 lb.) pork tenderloins
4-6 garlic cloves, sliced thin
2 t. canola oil
1/2 t. salt
1/2 t. pepper
2 t. dried rosemary, crumbled
2/3 C. apricot pourable all fruit
Fresh rosemary sprigs
Heat oven to 425. Cut 1/2 in. deep slices on surface of tenderloin; insert garlic. Combine oil, salt, pepper and rosemary. Place tenderloins on rack in roasting pan tucking tails under to make a uniform thickness, if necessary. Rub with oil mixture. Brush with apricot pourable fruit. Roast until instant read thermometer reaches 155 (20-25 minutes). Remove from oven; cover with foil and allow to stand 5 min. before slicing. Garnish with rosemary.
