Herbed Hasbrowns Potatoes

If you’ve ever had brunch at Redstone American Grille you’ll recognize these delicious hashbrowns!

Makes 12 servings

5 lbs. Blanched shredded hashbrown potatoes
4 1/2 C. Heavy Cream
1 1/4 C. Chopped Onions
2 1/2 T. House Salt & Pepper (2 parts salt : 1 part pepper)
1/2 C Grated Parmesan
1/4 C. Roasted garlic
3 oz. Whole Butter
1/4 C. Chopped Parsley

Mix all ingredients together except butter. Using whole hard butter, liberally butter 9 x 13 glass Pyrex. Fill Pyrex with mix. Bake uncovered in 350 preheated oven for ~45 min. Allow 15 min. rest time before serving so the potatoes set up.
