1 lb. chicken breast tenders
1/2 t. salt
1/4 t ground black pepper
1 t. olive oil
1/2 C. sliced onion
1/2 C. seedless raspberry jam
1 T. red wine vinegar
1 T. low-sodium soy sauce
1 t. bottled minced ginger
1/2 t. dried rosemary
Salt & Pepper to taste

Sprinkle chicken with salt and pepper. Heat oil in a large non-stick skillet over med. – high heat. Add onion and saute 2 min. Add chicken to pan, saute 8 min. or until chicken is done. Remove from pan. Add jam and remaining ingredients to pan; cook 2 min., stirring constantly with a whisk. Return chicken mixture to a pan, cook 4 min. stirring frequently.
